Hummus recipe


Ingredients:

  • 100g Chickpeas
  • 1 Lemon
  • 1 Tablespoon Tahini
  • 1 Teaspoon Baking soda
  • 2 Tablespoon Olive oil
  • 1/2 Teaspoon Cumin
  • 1/2 Teaspoon Salt

Instructions:

  1. In a bowl of water enough to dip chickpeas, add baking soda and chickpeas, let it soak overnight
  2. Rinse with fresh water the next day. Add the chickpeas in a pot of water and bring it to boil
  3. Next, turn heat to low and let is simmer for about an hour
  4. The water will start to boil and white foam will appear on the surface, remove foam until it clears
  5. To check if chickpeas are ready, crush a chickpea with your fingers, if mashed easily, its cooked
  6. Preserve access water in another pot for later use
  7. Put the chickpeas in a blender and process them for 1 minute
  8. Add olive oil, lemon juice, tahini to blender and process until the mix becomes smooth & creamy
  9. Now add cumin, salt,garlic and blend for 3 to 4 minutes
  10. If the mixture is thick add a spoon of preserved water at a time to meet required consistency
  11. Place the sauce in a bowl, add some olive oil over it, the Hummus is ready, serve or refrigerate
