Hummus recipe
Ingredients:
- 100g Chickpeas
- 1 Lemon
- 1 Tablespoon Tahini
- 1 Teaspoon Baking soda
- 2 Tablespoon Olive oil
- 1/2 Teaspoon Cumin
- 1/2 Teaspoon Salt
Instructions:
- In a bowl of water enough to dip chickpeas, add baking soda and chickpeas, let it soak overnight
- Rinse with fresh water the next day. Add the chickpeas in a pot of water and bring it to boil
- Next, turn heat to low and let is simmer for about an hour
- The water will start to boil and white foam will appear on the surface, remove foam until it clears
- To check if chickpeas are ready, crush a chickpea with your fingers, if mashed easily, its cooked
- Preserve access water in another pot for later use
- Put the chickpeas in a blender and process them for 1 minute
- Add olive oil, lemon juice, tahini to blender and process until the mix becomes smooth & creamy
- Now add cumin, salt,garlic and blend for 3 to 4 minutes
- If the mixture is thick add a spoon of preserved water at a time to meet required consistency
- Place the sauce in a bowl, add some olive oil over it, the Hummus is ready, serve or refrigerate
